  • 1 medium apple, grated (preferably Granny Smith or Honeycrisp)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground sage
  • ½ teaspoon ground cinnamon
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon maple syrup (optional, for a touch of sweetness)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon olive oil (for cooking)

Instructions

  • In a large mixing bowl, combine the ground chicken, grated apple, salt, black pepper, sage, cinnamon, paprika, garlic powder, onion powder, maple syrup, Dijon mustard, and red pepper flakes. Mix well until all ingredients are evenly incorporated.
  • Divide the mixture into 8-10 equal portions and shape them into patties or small sausage links.
  • Heat a large skillet over medium heat and add the olive oil.
  • Place the sausages in the skillet and cook for 4-5 minutes per side, or until they are golden brown and fully cooked (internal temperature of 165°F/74°C).
  • Remove from the skillet and let them rest for a couple of minutes before serving.
  • Serve hot with eggs, toast, or your favorite breakfast sides.
