Ingredients

Scale

For Savory Breakfast Pastries:

  • 1 sheet frozen puff pastry, thawed
  • 3 large eggs
  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ¼ cup cooked bacon or ham (optional)
  • 2 tablespoons milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh herbs (parsley or chives)
  • 1 egg (for egg wash)

For Sweet Breakfast Pastries:

  • 1 sheet frozen puff pastry, thawed
  • ½ cup fruit jam (strawberry, raspberry, or apricot)
  • ½ cup fresh fruit (blueberries, sliced peaches, or apples)
  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.

Step 2: Prepare the Savory Pastries

  1. Scramble the Eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Cook in a pan over medium heat until soft and slightly runny. Remove from heat.
  2. Roll and Cut Puff Pastry: Lightly flour your surface and roll out the thawed puff pastry. Cut into 4 equal squares.
  3. Assemble: Place a spoonful of scrambled eggs in the center of each square. Sprinkle with cheese and bacon or ham.
  4. Fold and Seal: Fold the corners toward the center or leave them open for a rustic look. Brush with beaten egg for a golden crust.
  5. Bake: Place on the prepared baking sheet and bake for 15-18 minutes until puffed and golden brown.

Step 3: Prepare the Sweet Pastries

  1. Roll and Cut: Roll out the puff pastry and cut it into 4 squares or rectangles.
  2. Fill with Fruit: Spread a spoonful of fruit jam in the center. Top with fresh fruit. Sprinkle with cinnamon and sugar.
  3. Fold & Crimp: Fold the pastry over into a triangle or leave it open like a Danish. Press the edges with a fork to seal. Brush with egg wash.
  4. Bake: Place on the baking sheet and bake for 15-18 minutes until golden brown.
  5. Dust with Sugar: Once cooled slightly, dust with powdered sugar for a bakery-style touch.

Notes

  • Pair with fresh fruit, yogurt, or coffee for a complete breakfast.
  • Drizzle sweet pastries with honey or icing for extra flavor.
  • Add a side of avocado or smoked salmon to savory pastries for a gourmet touch.
