- 1 cup pumpkin puree
- 2 ripe bananas, mashed
- 2 cups all-purpose flour
- ¾ cup brown sugar
- ½ cup vegetable oil (or melted butter)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- ½ cup chopped walnuts or pecans (optional)
- ½ cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mash the bananas and mix them with the pumpkin puree, brown sugar, oil, eggs, and vanilla extract.
- Gradually fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- If using, stir in the walnuts and chocolate chips.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
