Description

  • 4 rockfish fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tablespoon chopped fresh parsley
  • Lemon wedges for serving

Instructions

  • Pat the rockfish fillets dry with a paper towel. Season both sides with salt, pepper, and paprika.
  • Heat the olive oil in a large skillet over medium-high heat. Add the rockfish fillets, skin side down if applicable, and cook for 3-4 minutes per side until golden brown and cooked through. Remove the fillets and set aside.
  • In the same skillet, reduce the heat to medium and melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  • Stir in the lemon juice and parsley, then drizzle the sauce over the cooked rockfish.
