Description
Crème brûlée is traditionally a sweet, creamy custard with a caramelized sugar topping, but this savory version transforms it into an elegant appetizer or side dish. With a rich, silky texture and a crispy, salty topping, savory crème brûlée is perfect for impressing guests at dinner parties or adding a gourmet touch to your meals.
Ingredients
Scale
For the Custard:
- 1 ½ cups heavy cream
- ½ cup whole milk
- 4 large egg yolks
- ½ cup grated Parmesan cheese (or Gruyère for a nuttier flavor)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg (optional)
- 1 teaspoon fresh thyme or rosemary, chopped
- ½ teaspoon garlic powder (or 1 minced garlic clove)
For the Caramelized Topping:
- 2 tablespoons grated Parmesan or Pecorino Romano cheese
- 2 tablespoons panko breadcrumbs
- 1 teaspoon butter, melted
- ½ teaspoon smoked paprika (optional, for extra flavor)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 300°F (150°C).
- Place 4 small ramekins in a deep baking dish.
Step 2: Make the Custard
- In a saucepan over medium heat, warm the heavy cream and milk until steaming but not boiling. Stir in the Parmesan, salt, pepper, nutmeg, thyme, and garlic powder.
- In a separate bowl, whisk the egg yolks until smooth.
- Temper the eggs: Slowly pour the warm cream mixture into the yolks while whisking continuously. This prevents the eggs from scrambling.
Step 3: Bake the Crème Brûlée
- Strain the mixture through a fine sieve to remove any lumps.
- Divide the custard evenly between the ramekins.
- Pour hot water into the baking dish until it reaches halfway up the ramekins (this creates a water bath for even baking).
- Bake for 30-35 minutes, or until the custard is just set but still slightly jiggly in the center.
- Remove from the oven and let cool to room temperature. Refrigerate for at least 2 hours (or overnight) for the best texture.
Step 4: Prepare the Crispy Topping
- In a small bowl, mix grated Parmesan, panko breadcrumbs, melted butter, and smoked paprika.
- Sprinkle the mixture evenly over the chilled crème brûlée.
- Use a culinary torch to melt and brown the topping until golden and crispy. If you don’t have a torch, broil in the oven for 1-2 minutes (watch closely to prevent burning).
Notes
- Serve warm or cold as an appetizer or savory side dish.
- Pair with crusty bread, crackers, or a light salad.
- Add toppings like caramelized onions, truffle oil, or crispy prosciutto for extra flavor.
