Ingredients

Scale

For the Roll-Ups:

  • 8 slices of soft white bread (crusts removed)
  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup fresh strawberries, finely chopped

For the Coating:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

For the Egg Mixture:

  • 2 large eggs
  • 1/4 cup milk

For Cooking:

  • 3 tbsp unsalted butter, melted

Instructions

  • n a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  • Spread a thin layer of the cream cheese mixture onto each slice of flattened bread.
  • Sprinkle chopped strawberries over the cream cheese layer.
  • Roll up the bread tightly, securing the filling inside.
  • In a separate small bowl, combine the granulated sugar and cinnamon. Set aside.
  • In a shallow dish, whisk together the eggs and milk.
  • Heat a non-stick skillet over medium heat and add 1 tablespoon of melted butter.
  • Dip each roll-up into the egg mixture, coating it evenly, then place it in the skillet seam-side down.
  • Cook for 2–3 minutes per side, turning until all sides are golden brown. Repeat with the remaining roll-ups, adding more butter as needed.
  • While still warm, roll the cooked roll-ups in the cinnamon-sugar mixture until coated.
  • Serve warm with syrup, whipped cream, or extra fresh strawberries.

Notes

  • Use brioche or challah bread for a richer texture.
  • For a burst of flavor, add a hint of lemon zest to the cream cheese mixture.
  • These roll-ups taste great with a drizzle of chocolate or strawberry sauce!
