For the Roll-Ups:
- 8 slices of soft white bread (crusts removed)
- 4 oz (115 g) cream cheese, softened
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1/2 cup fresh strawberries, finely chopped
For the Coating:
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
For the Egg Mixture:
- 2 large eggs
- 1/4 cup milk
For Cooking:
- 3 tbsp unsalted butter, melted
Instructions
- n a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread a thin layer of the cream cheese mixture onto each slice of flattened bread.
- Sprinkle chopped strawberries over the cream cheese layer.
- Roll up the bread tightly, securing the filling inside.
- In a separate small bowl, combine the granulated sugar and cinnamon. Set aside.
- In a shallow dish, whisk together the eggs and milk.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of melted butter.
- Dip each roll-up into the egg mixture, coating it evenly, then place it in the skillet seam-side down.
- Cook for 2–3 minutes per side, turning until all sides are golden brown. Repeat with the remaining roll-ups, adding more butter as needed.
- While still warm, roll the cooked roll-ups in the cinnamon-sugar mixture until coated.
- Serve warm with syrup, whipped cream, or extra fresh strawberries.
