  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder
  • Salt and pepper to taste
  • Optional: ¼ cup breadcrumbs for topping

Instructions

  • Bring a large pot of salted water to a boil and cook the mini pasta according to the package instructions until al dente. Drain and set aside.
  • In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to form a roux.
  • Gradually add the milk, whisking constantly to avoid lumps. Continue cooking until the sauce thickens, about 5-7 minutes.
  • Stir in the cheddar cheese, Parmesan cheese, garlic powder, mustard powder, salt, and pepper. Mix until the cheese is fully melted and the sauce is smooth.
  • Add the cooked pasta to the cheese sauce and stir until well coated.
  • (Optional) Transfer the mac and cheese to a baking dish, top with breadcrumbs, and broil for 2-3 minutes until golden and crispy on top.
