Ingredients
Scale
- 8 oz mini pasta (such as mini shells or ditalini)
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 ½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon mustard powder
- Salt and pepper to taste
- Optional: ¼ cup breadcrumbs for topping
Instructions
- Bring a large pot of salted water to a boil and cook the mini pasta according to the package instructions until al dente. Drain and set aside.
- In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to form a roux.
- Gradually add the milk, whisking constantly to avoid lumps. Continue cooking until the sauce thickens, about 5-7 minutes.
- Stir in the cheddar cheese, Parmesan cheese, garlic powder, mustard powder, salt, and pepper. Mix until the cheese is fully melted and the sauce is smooth.
- Add the cooked pasta to the cheese sauce and stir until well coated.
- (Optional) Transfer the mac and cheese to a baking dish, top with breadcrumbs, and broil for 2-3 minutes until golden and crispy on top.
- Serve warm and enjoy!
Notes
- For a spicier version, add a pinch of cayenne pepper or red pepper flakes to the cheese sauce.
- Use a combination of cheeses like mozzarella, Gruyère, or Monterey Jack for extra flavor.
- Serve with a fresh green salad for a balanced meal
